Paramannya [Indian]
(Indian Porridge)
Introduction: Paramannya (also called Payesh) is a classic Indian Rice porridge. A Delightful Dessert suitable for every possible Indian meal.
Ingredients:
- Rice (scented / Govindo Bhog / Arborio rice) 5 table spoon,
- 1 liter cream milk
- 25gm Cashew nuts
- 25gm Raisins
- 2 bay-leaves
- 5-6 green Elaichi (crushed to powder)
- 1 tbsp Ghee (clarified butter)
- 10-12 tbsp Sugar (as per taste)
- Boil milk in a deep pot
- clean rice using a wet cloth
- coat it with ghee
- separate and keep aside 2 cups of milk,
- boil the rice with the milk left in the pot with bay-leaves
- lower the flames,stir slowly till rice gets boiled ( al dente) [ if needed, add the milk kept aside ]
- add sugar
- after sugar dissolves completely, add cashew nuts and raisins and powdered elaichi
- pour the thick content from the pot into a big bowl
- garnish with cashew nuts and raisin.
