Bengali Shukto [Indian]
Introduction: Shukto is a mixture of diced / sliced vegetables, such as,raw banana, potatoes,brinjal / egg plant, drum stick and bitter gourd or karela, are must you can add also parwal,raw papaya e t c. The vegetables are lightly sautéed in ginger, mustard seed / panch foran, and radhuni seed [celery fruit seed or ajmud] then cooked with water /milk.
Ingredients:
- All veges cut into 2 inches lengthwise
- 1 cup of potatoes
- 1 cup of raw bananas
- 1 cup of raw papayas
- 1 cup of drum stick
- 1 cup of brinjal
- 1/2 cup of karela
- 1 cup of parwal
- 1 hand full kulakhara leaves [optional]
- 1 cup of broken or small size bodies
- 1 tbsp ginger paste
- 1 tsp panch foran 1/4 tsp radhuni seed
- 1 tsp each yellow mustard -radhuni powder
- 1/2 tsp each cumin - coriander powder
- 1/5 tsp turmeric powder
- Salt - sugar as per taste, 2 bay leaves
- 1 tsp mouri /fennel /saunf powder
- 1 tbsp corn sturch
- 1/2 tsp ghee 4-5 tbsp mustard oil
Procedure:
Heat oil in a wok and add boddis and fry them until it
turns golden and take out them in a bowl then add
karelas and fry them until light golden .
Now add panch foran, bay leaves, and radhuni seed.
When they stop crackling, add all veggies,ginger paste,
salt & sugar and all powder masalas and saute the veggies
with masalas for 5 mins on low flame.
Then add corn starch with 2-1/2 cup of water
and transfer the curry in a pressure pan / cooker
and cover the pan for 3-4 whistles.
When the cooker cools down then open the lid and add
fried boddis and fried karelas cook for 2-3 mins on
medium flame now add ghee. After that put off the gas.
Ready to serve the Bengali Shukto With Hot Rice.
Serves: 6-8
