Potoler Dorma [stuffed fruit & nuts] Top - 10 - VEG RECIPES


Potoler Dorma [Veg Curry-2]

Introduction:  Niramish Potoler Dorma.Stuffed Pointed Gourd. A traditional Bengali dish- no onion, no garlic. Potoler Dorma /  Stuffed Pointed Gourd / bharwa Parwal is a Bengali delicacy with curry. This dish is a must in our occasions.

Ingredients:
  • 7-8 pieces of big size potol /parwal /pointed gourd 
  • 1/2 cup of fresh grated coconut without brown skin
  • 6-7 green chilli & 2-3 tbsp roughly chopped cashew-kishmis
  • 2-3 tbsp each yellow mustard seed and poppy seed.
  • 1/2 tsp black cumin / onion seed / kala jeera 
  • 1 bay leaf, 4 cloves 2 pieces of 1/2 inch cinnamon sticks
  • 1 isp garam masala powder ,1/2 tsp corn starch
  • 1/4 tsp each cumin, coriander & turmeric powder
  • 1/2 cup of mustard oil for frying - cooking
  • Salt and sugar as per taste
  • 2-3 slated red  chillis for garnish [optional]
Procedure:

Clean and wash the parwals  and scratch out its glossy
lair from the skin with knife carefully but don't pill its
skin. Now cut a small part from the top.


After that scrap out  its pulpy seed with pillar or handle
 of tea spoon but carefully.


Then marinate the parwals / pointed gourd with 
pinch of turmeric powder and salt and keep a side 
for 5-7 mins. 


Prick the parwals on all the four sides with a fork carefully.


Take poppy seeds, grated coconut, mustard seed and 
green chillis grind all together and make a thick paste.
Now again grind scrapped parwals seeds and make a 
thick paste.


Now heat oil in a pan and add cumin, 1/2 of the poppy -coconut
 paste and parwal seed paste  and mix well on low flame.
Now add garam masala powder, salt & sugar to taste and
fruit -nuts and mix well and make a tight dough.Stuffing is ready.
Take out and keep it for cooling for 10 mins.


Now stuff 3/4 part of the all parwals with stuffing.
After that the remaining 1/4 th part of the all
parwals cover with the cap. Now up side push 
down the cap. Heat oil in a pan for frying. Now
 fry the all stuffed parwals carefully. After that
 take out and keep a side all fried parwals.



Now heat the  remaining oil in a pan and add cumin, 
bay leaf, and cinnamon pieces, after that when they stop
crackling........


 then add remaining poppy-coconut paste,cumin,
coriander, turmeric powder and mix well. Now add salt-sugar 
and 1/2 cup of water and cook on medium flame until oil 
comes over the masala.


After that add the fried stuffed parwals flip and coat 
with masala carefully.Now add 3/4 th cup of water and
cover the pan with lid and cook on low flame for 3-4 mins.


After that open the lid and flip the parwal again and add
garam masala powder and slated red chillis for garnish. 


Now ready to serve Potoler Dorma [Veg Curry] with Hot
Rice, Polu, or Paratha. 
   Serves :  3-4
