Jugal Bandi In Buttery Red Curry TOP - 10 - VEG RECIPES

Jugal Bandi In Buttery Red Curry[20 Easy Steps]

Introduction:         Discover delicious Palak Paneer (Spinach and Cottage cheese) Jugal bandi / kofta dipped in rich, creamy, buttery red tomato based gravy.                     

Ingredients:


  • 2 bundle of fresh and chopped palak / spinach leaves
  • 1 cup /200 g of cottage cheese / grated paneer
  • 2 tbsp roasted grah flour. 4 tbsp corn flour
  • 2 tbsp each grated garlic & green chillis
  • 1 big size onion & 2-3 big size tomato roughly chopped
  • 1/4 tsp turmeric & 1 tsp kashmiri red chilli powder
  • 1/2 tsp cinnamon & 1 tsp garam masala powder
  • 1/4 tsp kasuri methi / dry fenugreek leaves powder 
  • 4 cubes of butter & 1/2 cup of white oil for frying & cooking
  • Salt and honey as per taste. 1/2 cup of fresh cream.



Procedure:

Blanch and strain the palak / spinach


After that finely chop the blanched palak / spinach.


Now heat 2 tbsp oil in a wok / kadai and add 
grated garlic, green chillis and 1-2 pinch of 
turmeric powder and saute for 1 mint.


After then add roasted gram flour and salt to 
taste and saute for 3-4 mins on medium flame.


Then add chopped palak, corn flour 1 tbsp, 1/2 tsp
 garam masala powder and 1/2 tsp salt and mix well
and make a tight dough.


After that put the dough in freezer for  10-15 mins.


after that cut the dough equal 12-14 parts.



Now take the paneer / cottage cheese ina flatter 
and add cinnamon powder, 1/4 tsp salt and 1 tbsp
corn flour and mix well and make a smooth dough.
Now cut the dough equal 12-14 part and make   small
balls with equal part of paneer & palak .


Now stuff the paneer balls in side the  palak balls 
carefully and make Jugal bandies.



Now roll each Jugal bandies with corn flour.
And give them rest for 10-15 mins .


And dust out extra flour.



After that heat oil in a wok / kadai and fry the 
Jugal bandies nice golden color on medium flame.


After 20-30 mins when all Jugal bandies comes 
cool down, then cut them equal two parts carefully.
And toast this inside part of the Jugal bandies without
oil in wok /pan on low flame for 1 - 1&1/2 mins.


Now 2-3 tbsp oil in a wok and add  tomato, onion
1 tbsp grated green chillis and 1/4 tumeric powder
and saute for 2-3 mins .


And make with that a smooth paste .


Now heat 2-3 tbsp oil & butter in wok ,now pour the
tomato mixture in kadai and add chilli powder, fenugreek 
leaves / kasuri methi powdre, garam masala powder and
 salt to taste and mix well and add 1& 1/2 cup of water .
When the gravy start to boil then add honey / sugar
 as per taste and cook well.When the gravy becomes 
thicker then add fresh cream  and put off the gas.


Now take a serving bowl and pour 1-2 rice spoon of
 gravy and set Jugal bandies on top of the gravy . 


Now ready to serve Jugal Bandies In Buttery Red Curry 
with Roti, Nun, Tandoori Roti, or Paratha.
Serves:  4-5
