Gajar Ka Halwa TOP - 10 - VEG / NON-VEG UNIQUE DISHES

Gajar Ka Halwa [Carrots Dessert ]

Introduction:     Gajar Ka Halwa  or carrot halwa is  very famous Indian dessert recipe. Gajar Ka Halwa is a sweet dessert pudding associated mainly with North India . Gajar Ka Halwa also known as  Gajrela in Punjab. Main ingredients Carrot, powder milk, pure Ghee, Khoya kheer, sugar & nuts.


        

Ingredients:



  • 1 kg fresh grated gajar /carrots
  • 4-5 tbsp ghee
  • 1 cup of sugar
  • 100 g powder milk
  • 1 hand full finely sliced almond and cashew nuts
  • tbsp green cardamom powder 
  • 2-3 bay leaves
  • 200 g khoya kheer




                                                        




Procedure:


Take a big sized Wok / kadai and place the
 grated gajar in the kadai .


Add 2-3 bay leaves and milk powder and mix well. 


Now add kheer and mix well with your hand.


Mix until the carrots become watery and  then put 
on the gas and place the gajar mixture kadai on
 the gas stove.


cook the gajar mixture with cover on low flame
for 10-15 mins.


But stir 2-3 mins after every 5 mins .


When the water dries up, the gajar 
softens and changes its color,  


Then add a cup of sugar  and 2 tbsp ghee.


Now mix them together on medium flame and 
stir continuously until the sugar syrup dries up.


Now add green cardamom powder and finely sliced 
almond and cashew nuts and mix well. Now put off the 
gas and add 1-2 tbsp ghee and mix well. 


Now take out gajar ka halwa in a bowl and decorate with
 2 tbsp chopped nuts. 


Now ready to serve Gajar Ka Halwa Hot or Cold.


Serves:  6-8

Mughlai Paratha TOP - 10 - VEG / NON-VEG UNIQUE DISHES



Mughlai Paratha [With  veggies] Easy 16 Steps}                  

Introduction:                  Mughlai    Paratha is a stuffed flat bread, that originated in the  Indian subcontinent.  Mughlai Paratha stuffed with egg and minced meat and with vegetables /with out vegetables.                                                                                                                                   

Ingredients:                                                                                                                                                          

Step-1:


  • 4-5 cup all purpose flour
  •  1/2 tsp each salt - sugar
  • 2 tbsp sunflower oil
  • 1&1/2 cup of milk / water
Step-2:                                                                                                 
  • 3-4 cup medium size diced  potatoes                              
  • 1/4 tsp fenugreek &fennel seeds            
  • 1 pauch chicken masala [everest]
  • 2 tbsp veg oil, salt & sugar to taste                                                                                                                                     Step 3:                                                                                                                                                                                         
  • 4-5 eggs
  • Salt & sugar as per taste
  • 5 tbsp bread crumbs
  • 5 tsp finely chopped green chillis
  • 5 tsp finely chopped onion
  • 5 tsp each finely chopped ginger - garlic
  • 5 tsp finely chopped broccoli
  • 5 tsp grated carrot
  • 5 tsp crushed roasted peanut
  • 1/2 cup sunflower / vegetable oil  
                                                                                                                                                                                                                                                                                                                

                                                                                                   



Procedure:
                                                                                                                                      

    Take the step-1 ingredients in a bowl and

     make a soft dough.And cut the dough into 

     equal 4-5 parts. After that cover the doughs
    with wetly  kitchen towel.


    Heat oil in a pressure pan and add fenugreek & 
    fennel seeds .



    when they stop crackling ,Add potatoes, 
    salt, pinch of turmeric powder.


    Now add chicken masala and 1/4 cup of water and 
    mix well and cook with two whistle. Now aloo sabzi
     is ready .


    Take bowl and mix all vegetables from step-3
    average 1 tsp and one egg  for each paratha .
    [its a double yolk egg but you can use single yolk egg]


     Now take a paratha dough and roll it with oil
     like big size , thin roti .                    
                                              


    Now add 1 tbsp bread crumbs with this egg mixture.


     

    After that pour the egg mixture on roti. Spread the 
    egg mixture 3-4 inches equal sides from the center.



    Now fold the 1st side of the roti carefully.


             
    And then fold the 2nd side of the roti.
       
     
    Now fold 3rd side of the roti like the picture.


         


     Last of all fold the 4th side of the roti overlap

    over the 3rd part.   





    Now heat 4-5 tbsp oil in a big size thick bottom
     pan and quickly place egg mixture stuffed roti 
    the up side in down.


    Fry that side of the roti on low flame. Then 

     flip the roti carefully and fry on medium flame.


    Now take out the paratha on chopping board.




    And then cut it with pizza cutter /knife / sharp spatula .


    Now mughlai Paratha is ready.


    Now ready to serve Mughlai Paratha With Aloo Sabzi .

    Chilli Chicken [Indo Chinese style] TOP - 10 -VEG / NON-VEG UNIQUE DISHES

    Chilli Chicken [Indo Chinese style]

    Introduction:          Spicy Chilli Chicken is a very popular Indo-Chinese dish in India. it is prepared by  first marinating skinless boneless chicken in vinegar, ginger-garlic paste and coted with Corn starch and egg and then deep fried.                   

    Ingredients:
    • 1 chicken breast cut into bite size pieces 
    • 2 tbsp each ginger - garlic paste
    • 1 row egg, 1/2 cup of vinegar
    • 5-6 tbsp corn starch and [1 tsp semolina optional] 
    • 10-15 chopped  green chillies shocked in 2 tbsp vinegar
    • 3-4 tbsp tomato sauce
    • 4-6 tbsp dark soy sauce
    • Salt and sugar as per taste
    • 1/2 cup of medium diced cut tomato
    • 1/2 cup of medium diced cut onion
    • 1/2 cup of medium diced cut capsicum
    • 1/2 cup of white oil for cooking & frying
                                                           
    Procedure
    Marinate the chicken pieces with vinegar for 1/2 an hour 


    Now 2nd marination. Drain the extra vinegar .
     After then add 1/2 tsp salt, 2 tbsp ginger -garlic
    paste and 1 egg and mix well and keep aside for 15 mins. 


    After then add corn starch and semolina and mix
     well. Now heat oil in a wok and fry the chicken
     pieces until light golden on high flame. Now all fried
     chicken pieces keep a side.


                  Now add capsicum and onion in that remaining oil
                  and saute them 1-2 mins .
                
                                 
    After then add fried chickens and stir for 2 mins 
    on medium flame then add ginger -girlic paste .
            

    Now add diced tomato, salt & sugar and mix well.


    After that add  vinegar soaked chopped green 
    chillies and tomato sauce and mix well .



    After that add soy sauce and 1/2 cup of chicken 
    stock / water .



    When its starts to boil then add 2 tbsp corn starch
    with 2-3 tbsp chicken stock / water and mix well.


    When the gravy becomes thicker, put off the gas.


    Now ready to serve Gravy Chilli Chicken with 
    Fried rice or Paratha.


    Serves: 4-5
